Hi Dave.

I was trying to accelerate electrons myself as well with a little bit different construction. I did it wrong and need to rebuild. Silly mistake   My opinion is such : You have certain amount of energy which you can use to create attractive force for free ambient electrons/ions. All this energy can cause local temporary acceleration of free electrons(due to attraction of free electrons). But what happen when we distribute and switch- this amount of energy  from place to place around bigger space and to create vortex. I believe we can then observe two effects- suction effect and increase of energy as each ion attracted to new place already carry kinetic energy from the previous  place it was attracted to. And if this will spin around some coil it might act as a small magnets (electrons are small magnets) drugging that coil   and to create current??   I know, it is actually principle of motor, but in this case magnets(electrons) are spinning around in enormous speed and solid state.

Just messing with imagination

Starting to get the idea yet?
Now riddle me this, what would happen if you had two magnets facing N to N and you placed the pancake coil in between, what would happen when electrons are ran through the coil.
