I also think he checks E field with it, though his probe may include also a ferrit rod with a coil on it, it must be responsive to E fields

looking at the vid linked to above and some of the other videos it appears that the coils are wound using LH windings except for an additional coil which looks to be RH wound over the LH wound coil on one end. The one set of coils looks to be center tapped similar to Don Smiths design, the tickler coil from the HV source is 3 or 4 turns of 3 pieces of copper wire put together.

It appears the load in one of the videos uses a tail coil config, lamp is connected to the right side coil (bottom coil??) and connected to the center tap point. No capacitors are used on the coils on the form just the input side by the spark gap. Almost looks like a bucking coil config on one side too.

Any other observations guys?

But during the video I could not see sparks?  And sparks long for short time, so saturation can be also short: coil looses its main inductance for a short time if so

Ferrite cores like that have been used in portable or table top AM radios for Long and Medium wave reception.  Check google: ferrite rod
