I'm going to say yes he is wrong. water reacts with carbon under the right conditions to release H2 and CO.
for coal gas, coal is burned then the air is cut off and steam injected to start the reaction. as it cools steam is
switched back to air to reheat the carbon.
in the case of your grease fire, the grease is too cool to react with the cold(relatively) water.only the oil vapour is on fire.
also the oil already has a lot of hydrogen bound to it.
still a bad idea to throw water on hot grease/oil.

It's taken longer than I might have thought, but still, past history is just plain no practical joke to poke everyone in the ribs to make us all flinch.  "The Collapse" still coming if the Ancient Roman Empire is any guide.  Nothing whatsoever goes on forever, with the famous (theological?) exception of infinite space.  Things always change and everything on this planet is no exception---Earth isn't infinite.  People don't change radically, but they can learn--especially with pain.

I suppose I've considered the following as collapse contributors:

1) Worsening conditions at Fukushima-Daiichi
2) Conflicts North Africa and the Middle East causing oil shortages
3) American financial debt
4) European financial debt---especially Greece, Ireland, Portugal and Spain
5) American stock market instability
6) Other countries stock market's instability
7) Continuing natural disasters worldwide

The list is incomplete.  Can anyone think of more things...?
