I think in a hydraulic system height difference is more important than the weight (not density) of the liquid. You can balance a very
huge volume of water on one side with almost negligible volume of water on the other side provided height is equal which is the principle used in hydraulic press.

I don't see any point in making two jars of equal size.  In that case the idea of hydraulic press itself will be lost.  Even if the displacement of water is less, it can produce considerable energy because the column is oscillating and force generated in bigger jar is very high.
