 Another usage of zener diode is because those 3V are difference between anode cathode. If you connect a cap and battery with zener diode then when cap is charged above 3V higher then battery the excess is dumped back to battery, but in most cases you need additional elements because zener diode cannot pass too much current.
That's the problem I need to solve in future, if you have kind of Don Smith circuit with energy stored in big electrolytic capacitor at 400V, how to limit that charge to not blow the capacitor :-(

What is the resistance of zener diode when conducting ?
