Two ways to explain.
1. ohm's law,  I=U/R,  "I" likes to keep constant so when R goes to infinity (switch opened) U rises to compensate for "I"
2. U=L dI/dt , bigger inductance and quicker current drop- the higher  EMFvoltage.

but not as much. He seems to be afraid of getting burned. The power supply shows false information to show others that .. I have it and you don't.

Hmm well thats because it's a back EMF circuit and roumour has it you only get between 5 and 15 % BACK.
AND he isn't using any thing to make sure he isn't wasting charge powere !!! and did you notice he stops the video ?
