I only have something against using stainless steel.Maybe graphite or carbon rods(clean) could be used?I really don't know anything about joe cells or moe joe as its presented in these video clips. If you are not going to drink it(the water) then I have no concern at all.But someone did talk here about drinking it.I made homemade wine in the past and was warned against using anything metal in the process.Yet how many times did someone put a pencil in their mouth and not die?Triffid

triffid  , not sure if you have been to a winery or not but I have as I sell the pumps they use to transfer / bottle it , they are ALL STAINLESS STEEL and ALL the tanks it is sored in are STAINLESS STEEL , It might be your hobby but Its my job to know these things .

Well it is only a hobby to me.I am not into production on any commercial scale.I did use stainless tanks to make pepsi When I worked for them(4 years). But I never used electricity on electrodes in the water or pepsi. And I think that is the difference. If you are running a current into two electrodes dipped in water. You are going to get some of the electrode into the water. For that matter(graphite would be bad too(since its a form of lead)).So I'm left here with food grade carbon rods only.Triffid

I am concerned only because someone talked about drinking this stuff. When you make wine you go through a period of 2 to 3 weeks  to ferment and months of keeping the wine in glass bottles to let it age.The older the wine gets the better it is.So in a pepsi plant its only 24 hours or less that a  stainless steel tank will hold anything.I don't know about a brewery because I never worked in one.Triffid

I know too that pop cans have a thin plastic coating in them.Maybe some stainless steel tanks have the same kind of coating?Triffid
